  1. Soak the sotanghon noodles in hot water until softened, then drain and set aside.
  2. Chop the tomatoes, mince the garlic, and slice the onion.
  3. In a pan, heat the cooking oil over medium heat. Add the garlic and onions, sauté until fragrant and onions are translucent.
  4. Add chopped tomatoes and sauté until they are soft and mushy.
  5. Add the canned sardines with the tomato sauce into the pan. Stir and let simmer for 5 minutes to combine the flavors.
  6. Add the soaked sotanghon noodles to the pan and mix well. Cook, stirring occasionally, until the noodles are heated through.
  7. Toss in the Dahon ng sili and mix well, cooking until wilted.
  8. Squeeze fresh calamansi juice over the dish just before serving for added flavor.
