Ingredients
- 1 piece, 7 ounces each filet mignon steak
- 1/2 tablespoon cracked peppercorn
- 3/4 cup red wine
- 1/2 teaspoon salt
- 1/2, minced small onion
- 3 tablespoons olive oil
- 5 spears fresh asparagus
- 1 cup mashed potato
Steps
- Season the filet mignon on all sides with salt and roll it in cracked peppercorn.
- In a hot pan, sear the steak with olive oil over medium-high heat for about 3 minutes on each side, then include the edges if thick.
- Transfer the steak to a preheated oven at 350°F, and bake for 7 minutes.
- Remove the steak; in the same pan, add more olive oil if necessary and sauté the minced onion until soft.
- Pour the red wine into the pan, letting it reduce by half while simmering.
- Reintroduce the steak to the pan and coat it in the reduced sauce for 30 seconds per side.
- Plate the filet mignon and pour the red wine sauce over.
- Serve alongside blanched asparagus and mashed potatoes.
