Ingredients

- 1 thumb ginger
- 1 clove garlic
- 3 tbsp white vinegar
- 0.33 cup water
- 1/3 piece onion
- 1/3 piece Chinese eggplant
- 1/3 piece bitter melon
- 1 piece long green pepper
- 1/3 tsp whole peppercorn

Steps
- Render oil from the pork fat in a pan over medium heat until it becomes golden.
- Add garlic, ginger, and onion to the oil; sprinkle peppercorns.
- Lay the milkfish gently over the aromatics.
- Layer the green pepper, eggplant, and bitter melon over the fish.
- Pour the vinegar into the pan. Cover and bring to a boil, then add water.
- Simmer for 15 minutes to meld flavors.
- Finish with fish sauce to taste, then serve.
