  1. Heat cooking oil in a pot over medium heat, then sauté the garlic until fragrant and add the onions, cooking until they become soft and translucent
  2. Add the chicken pieces and cook for about 5–7 minutes, stirring occasionally, until the chicken is lightly browned on all sides.
  3. Stir in the chopped tomatoes and cook for several minutes, gently mashing them with a spoon as they soften to help release their juices and create a flavorful sauce.
  4. Pour in the fish sauce and mix well, allowing it to cook for about a minute so the flavors can meld together.
  5. Add the water and bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 25–30 minutes or until the chicken is tender.
  6. If using potatoes and carrots, add them to the pot and continue simmering for another 10–15 minutes, or until the vegetables are cooked through
  7. Taste the dish and season with salt and pepper as needed. If you prefer a richer tomato flavor, stir in a tablespoon of tomato paste and simmer for a few more minutes.
  8. Once the chicken is tender and the sauce has slightly thickened, remove the pot from the heat and serve the Kinamatisang Manok
