Grilled Bangus with Brown Rice and Kangkong
Bangus needs salt in the marinade — that is non-negotiable for flavor. The trick is salting it once, well, before grilling rather than adding sauce after. Kangkong sautéed in garlic is one of the best vegetable side dishes in Filipino cooking.

Ingredients
- 300g fillet Boneless Bangus
- 1.5 cups cooked Brown Rice
- 2 bundles Kangkong
- 6 cloves Garlic
- 3 pcs Calamansi
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 1.5 tbsp Cooking Oil
Steps
- Rub bangus fillet with 1/2 tsp salt, black pepper, minced garlic, and calamansi. Rest 15 minutes.
- Grill or pan-fry with minimal oil, flesh-side down 4-5 minutes, flip 3-4 minutes.
- Sauté 4 cloves minced garlic in oil over high heat until golden. Add kangkong, stir-fry 2 minutes. Season with a pinch of salt.
- Serve bangus with brown rice and sautéed kangkong.
