Ginisang Monggo with Chicken
Mung bean stew is one of the most complete plant-protein meals in Filipino cooking. Adding chicken breast doubles the protein without much extra fat. The broth is light, filling, and genuinely good.

Ingredients
- 80g dry Mung Beans (Monggo)
- 100g, cubed Chicken Breast
- 50g Kangkong
- 4 cloves minced Garlic
- 1 pc chopped Onion
- 1 pc chopped Tomato
- 1 tbsp Fish Sauce
- to taste Salt
Steps
- Boil mung beans in 3 cups water for 25–30 minutes until soft and beginning to split. Do not drain.
- In the same pot, add garlic, onion, and tomato. Stir and simmer 5 minutes until softened.
- Add chicken breast cubes. Cook 8 minutes until fully cooked through.
- Add kangkong leaves. Season with fish sauce and salt. Cook 1 minute until leaves wilt.
- Serve as a thick stew — no rice needed, the monggo is filling on its own.
