Chicken Breast with Ginisang Ampalaya and Brown Rice
Ampalaya is one of the most underrated gym vegetables — high in fiber, very low calorie, and it slows sugar absorption. Sautéed with egg and chicken breast, it becomes a genuinely satisfying meal that holds well under a calorie target.

Ingredients
- 150g, cubed Chicken Breast
- 200g, sliced thin Ampalaya (Bitter Gourd)
- 1 pc Chicken Egg, Extra Large
- 1 cup cooked Brown Rice
- 4 cloves minced Garlic
- 1/2 pc sliced Onion
- 1 tbsp Soy Sauce
- 1 tsp (for salting ampalaya) Salt
- 1/2 tsp Black Pepper
Steps
- Salt sliced ampalaya and let sit 10 minutes to draw out bitterness. Squeeze and rinse thoroughly under cold water.
- Season chicken breast cubes with black pepper. Sear in a hot pan with no oil for 4–5 minutes until golden. Set aside.
- In the same pan, sauté garlic and onion until softened. Add ampalaya and stir-fry 2–3 minutes.
- Return chicken to the pan. Add soy sauce and toss everything together over high heat.
- Push ingredients to the side. Crack in the egg and scramble quickly, then mix into the stir-fry.
- Serve over brown rice.
